Breakfast plans are truly as easy as 1-2-2-3, and dinner plans are well within reason. But lunch is so interspersed with our work, errands, or perhaps classes. Lunch is fast, filling, and, if one is eating healthy, light which is almost an oxymoron. Then the ideas come in. 10 healthy lunch recipes that are easy. Each can be whipped up in 30 minutes or less. Some even quicker.
These are not chef-type meals. Rather, they are more like throw-gather dinners from ingredients in your pantry, crisp veg + some leftover chook or rice. If I was not awake by now they do tend to tasting good. Like really good.
Mediterranean Chickpea Salad
Colorful. Fresh. No cook. It is as simple as a bowl with a can of chickpeas, diced cucumbers, tomatoes, red onion with feta, and lemon. It's crunchy, tangy, and filling. Great for a desk lunch, dinner, you name it.
Avocado Toast with Egg
Yup, it’s trendy. However, it is also easy and delicious. Avocado smashed on toast — whole grain, salt, chili flakes, maybe an olive oil drizzle. Top with a fried egg, or poached egg. Creamy, crunchy, healthy fat. Takes less than 10 minutes.
Chicken Lettuce Wraps
Light yet filling. Some form of shredded chicken combined with soy sauce or garlic and ginger, maybe a dash of honey. Spoon it into real leaves of lettuce. Or, put in shredded carrots or strips of cucumber for additional texture. Use your hands; it's fun! It's like a taco, but more nutritious!
Veggie Stir-Fry with Rice
Quick, hot, and delicious. Broccoli, bell peppers, snap peas, you name it, throw it on a pan with a little oil, garlic, and soy sauce and you've got yourself lunch. You can throw in some pre-cooked rice, or pull out a pouch from the microwave to expedite. And you'll have yourself a bowl of goodness in under 20 minutes!
5. Tuna and White Bean Salad
Grab a can of tuna. Add a can of white beans. Add a few cherry tomatoes, parsley, red onion, olive oil, lemon juice. Lots of protein. Requires no cooking. Satisfying for hours. Honestly underrated.
Caprese Sandwich
Mozzarella, tomato leaves, and basil. Freshly slice them. Stack them in a crispy bread roll with a little drizzle of balsamic. This is summer in a sandwich. Soft, juicy, cheesy, but light. It would take you a couple of minutes to prepare this.
Lentil Soup
Quick but cozy. Afterwards, pour in canned lentils, veggie broth, and a few spices- cumin, paprika or thyme. Let that simmer for 15 mins. Hearty goodness... done by lunchtime.
8. Shrimp Tacos
Lucky for you If you have frozen shrimp in the freezer. Or cream then sautéed with garlic, chili powder, and lime and easy wrap in tortillas with shredded cabbage and yogurt sauce. Fresh, spicy, bright. It seems a bit special, yet still healthy.
